    Students work with celebrity chef

    Craig Brown, SVQ Level 2 Professional Cookery student writes:

    On the 27th February 2010, Ackergill Tower welcomed celebrity chef Brett Graham to participate in the “Food of Love” weekend. Brett along with his souse chef Nathan worked with the Ackergill team and performed a cooking demonstration for a lucky few, including the hospitality staff and students from The North Highland College.

    Brett started his career in Australia, where at the age of 15 he worked in a simple fish restaurant. He moved from Sydney when he worn a highly acclaimed prize, which granted him a trip to visit London and he has not returned. He won the Young Chef of the Year in 2002 from The Square, Mayfair, and was given the opportunity to open The Ledbury. He currently has 2 Michelin starts.

    I was lucky enough to be involved and was honoured to work with a man of such talents. His demonstration included the cooking of squid risotto, mackerel, scallops, celeriac baked in ash and beetroot baked in clay. Everyone got tasters and thoroughly enjoyed the opportunity to learn from a world renowned chef.
